fruit & oat breakfast muffins

recipe adapted from The Engine 2 Diet

  •  3 cups oats
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 4 tbs. agave nectar
  • juice of 1 lemon
  • 1 apple, diced into small pieces
  • 6 ripe bananas
  • 1/4 cup walnuts, chopped
  • 1/4 cup dried cherries
  • 3/4 cup water
  • coconut oil

Preheat oven to 375º.  In a large bowl, lightly mash the bananas leaving some chunks.  Add the diced apple and lemon juice to the bananas and mix.  Add the walnuts, cherries, and water and mix.

In a separate bowl, combine the oats, baking powder, and salt.  Add this to the apple and banana mixture and mix thoroughly.

Prepare your muffin cups by lightly coating with coconut oil.  Divide the mixture evenly between 12 muffin cups.  These do not rise so your muffin cups will be heaping full.

Bake for 40 minutes or until golden brown on top. Enjoy!
